At Ironfish, we’re influenced by foods from around the world but prepare them whenever possible with ingredients that are fresh, local and organic.
We fly fish in daily from the waters of North Carolina, for example. We source tender, white scallops from Virginia’s coast. We choose our greens from local growers. We shop farmer’s markets. And we buy our mushrooms from a local known far and wide as “the mushroom man” for having raised foraging to an art form.
It’s not the easiest way to cook, no, but it pleases the palate and satisfies the soul. Enjoy!
